Consta de verduras asadas:&nbsp;berenjena,&nbsp;pimiento,&nbsp;cebolla&nbsp;y&nbsp;tomate.<\/p>\n\n\n\n<p>Existe un a variante elaborada con pimiento asado y bacalao en salaz\u00f3n denominada <strong>\u00abEsgarraet o esgarrat\u00bb<\/strong><\/p>\n\n\n\n<p>\ud83e\udd66 INGREDIENTES DE LA ESCALIVADA.<\/p>\n\n\n\n<p>1 Uni. Calabac\u00edn<br>2 Uni. Pimiento rojo<br>1 Uni Berenjena<br>1 Uni. Cebolla<br>4 Dientes de ajo<br><strong>VINAGRETA<\/strong><br>1dl Vinagreta francesa<br>M\u00e1s los 4 dientes de ajo asados y machacados.<br><strong>ACABADO<br><\/strong>8 Uni. Filetes anchoa 1 Huevo cocido<br>c\/s Aceitunas negras<br>Palmera de pan tostado<br>Perejil picado<\/p>\n\n\n\n<p><strong>ELABORACI\u00d3N<\/strong><\/p>\n\n\n\n<p>Untar con aceite las verduras y envolver en papel de aluminio.<\/p>\n\n\n\n<p>Hornear a 180\u00baC hasta que est\u00e9n cocinadas, notaremos una textura blanda al apretar con los dedos.<\/p>\n\n\n\n<p>Cocer los huevos durante 13 min. partiendo de agua hirviendo y refrescando al acabar. Pelar y reservar.<\/p>\n\n\n\n<p>Preparar una<strong><a href=\"https:\/\/www.estudiarcocinaygastronomia.com\/index.php\/2020\/03\/26\/emulsiones-en-la-cocina-calientes-y-frias\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\"> vinagreta francesa<\/a> <\/strong>con : Aceite de oliva, vinagre, mostaza y sal.<\/p>\n\n\n\n<p>Adicionar a la vinagreta francesa el ajo asado machacado y mezclar.<\/p>\n\n\n\n<p>Una vez fr\u00edas las verduras pelar y cortar en juliana gruesa.<\/p>\n\n\n\n<p><strong>Emplatado:<\/strong> Servir fr\u00eda colocando un base de verduras ali\u00f1adas con la vinagreta  y decorando con las anchoas, el huevo a cuartos o rodajas, las aceitunas negras y el perejil picado.<\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ensalada escalivada de verduras asadas.
