Llevar a ebullici\u00f3n.<\/td><\/tr><tr><td>5.<\/td><td>Dejar cocer unos 7 min. desde que rompa el hervor, escurrir (no refrescar).<\/td><\/tr><tr><td>6.<\/td><td>Poner a calentar una <a href=\"https:\/\/amzn.to\/3zyJkbh\" target=\"_blank\" rel=\"noreferrer noopener\">saut\u00e9<\/a>, lo suficientemente ancha para que no se superpongan, con la mantequilla y algo de aceite.<\/td><\/tr><tr><td>7.<\/td><td>A\u00f1adir las patatas cuando las grasas est\u00e9n calientes.<\/td><\/tr><tr><td>8.<\/td><td>Saltear vivamente. Sazonar.<\/td><\/tr><tr><td>9.<\/td><td>Terminar de cocinar introduci\u00e9ndolas en horno precalentado a unos 200\u00baC.<\/td><\/tr><tr><td>10.<\/td><td>Vigilar atentamente sin remover demasiado.<\/td><\/tr><tr><td>11.<\/td><td>Extraer del horno cuando las patatas est\u00e9n doradas y crujientes.<\/td><\/tr><tr><td>12.<\/td><td>Escurrir sobre sombrero y sobre papel absorbente.<\/td><\/tr><tr><td>13.<\/td><td>Servir calientes como guarnici\u00f3n de carnes y pescados.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>Observaciones y variaciones de las papas Noisette.<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td>1.<\/td><td>Si las patatas se han cocido demasiado en el agua, no saltear muy vivamente para que no se deshagan.<\/td><\/tr><tr><td>2.<\/td><td>Existen derivadas: <strong>-Patatas Parisienne:<\/strong> patatas Noisette de menor tama\u00f1o. <strong>-Patatas Guisante:<\/strong> patatas Parisienne de menor tama\u00f1o.<\/td><\/tr><tr><td>3.<\/td><td>Esta t\u00e9cnica de elaboraci\u00f3n de patatas se conoce con el nombre de <strong>Risolar.<\/strong> Consiste en dar forma a las patatas (tornear, extraer bolas, etc), blanquear partiendo de agua fr\u00eda sin sal, saltear en grasa caliente y hornear en horno caliente. El resultado debe presentarse como unas patatas doradas y crujientes en el exterior y cocidas y sabrosas en el interior.
