As\u00ed que tras su elaboraci\u00f3n deber\u00e1n pasar al abatidor de temperatura donde bajaremos su temperatura a 3oC y conservaremos inmediatamente.<\/p>\n\n\n\n<p><strong>Ingredientes:&nbsp;<\/strong>1l. de leche, 200 gr. de az\u00facar, 80 gr. de harina de ma\u00edz, aromatizante (canela en rama y piel de lim\u00f3n), 6 yemas de huevo.<\/p>\n\n\n\n<p><strong>Elaboraci\u00f3n: <\/strong>En un recipiente de material inalterable ( acero ) ponemos a infusionar casi toda la leche con la canela y la piel de lim\u00f3n. Mientras en otro recipiente; tambi\u00e9n inalterable, mezclamos las yemas con el az\u00facar, luego mezclamos con la harina y por \u00faltimo a\u00f1adimos un poco de leche que hab\u00edamos dejado. A esta carga se le a\u00f1adir\u00e1 la leche, una vez que haya hervido. Ponemos la mezcla al fuego y retiramos tras hervir y espesar. Se recomienda espesarla si se emplea caf\u00e9 l\u00edquido y se le da color con salsa par\u00eds.<\/li>\n\n\n\n<li><strong>Crema de licor:<\/strong>&nbsp;perfumada con el licor deseado y suele llevar el nombre del licor utilizado.<\/li>\n\n\n\n<li><strong>Crema muselina:<\/strong>&nbsp;se prepara montando la crema con mantequilla en una proporci\u00f3n de 1 litro de crema por 300 gramos de mantequilla.<\/li>\n<\/ul>\n\n\n\n<p><strong>Para conservar la crema, se debe refrigerar inmediatamente y no exceder las 24 horas, a menos que se disponga de una c\u00e1mara de enfriamiento r\u00e1pido o se haya bajado su temperatura en un abatidor, en cuyo caso se conserva un m\u00e1ximo de 3 d\u00edas.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Crema pastelera.
