En su opini\u00f3n, \u00abel programa inicial de la disciplina era err\u00f3neamente mezclar ciencia y tecnolog\u00eda\u00bb. Aunque asegura que se ha subsanado y eliminado la tecnolog\u00eda de la definici\u00f3n. En un art\u00edculo de revisi\u00f3n de 2009 y en posteriores comunicaciones con nosotros, describi\u00f3 la gastronom\u00eda molecular como la \u00abciencia para investigar los fen\u00f3menos que suceden cuando se cocina y buscar sus mecanismos\u00bb.&nbsp;<\/p>\n\n\n\n<p><strong>Divide este nuevo programa en cuatro componentes: <\/strong>&nbsp;<\/p>\n\n\n\n<p>1. Modelar las \u00abdefiniciones culinarias\u00bb.&nbsp;<\/p>\n\n\n\n<p>2. Recopilar y analizar \u00abprecisiones culinarias\u00bb.&nbsp;<\/p>\n\n\n\n<p>3. Explorar cient\u00edficamente el componente art\u00edstico de la cocina.&nbsp;<\/p>\n\n\n\n<p>4. Explorar cient\u00edficamente el \u00abv\u00ednculo social\u00bb de la cocina.&nbsp;<\/p>\n\n\n\n<p>Seg\u00fan This, las definiciones culinarias son los objetivos de las recetas; en otras palabras, la parte de las recetas que indica al cocinero qu\u00e9 ingredientes usar y la explicaci\u00f3n de qu\u00e9 hacer con ellos. Para estudiar y codificar esas definiciones cre\u00f3 el sistema de notaci\u00f3n conocido como CDS\/NPOS.&nbsp;<\/p>\n\n\n\n<p>Las precisiones culinarias son \u00abinformaci\u00f3n t\u00e9cnica \u00fatil [que se] a\u00f1ade a la definici\u00f3n, pero que sin embargo no es absolutamente necesaria para preparar el plato; incluyen las historias, los proverbios, los consejos, los m\u00e9todos, etc.\u00bb. This tiene cuidado en distinguir entre gastronom\u00eda molecular de lo que llama \u00abcocina molecular\u00bb (que en este libro se denomina cocina modernista).
